MERCY LUNCHEON SHARES TIPS ON COOKING WELL, EATING WELL WITH DIABETES
March 12, 2007/Iowa City, IA: Mercy Iowa City will host a cooking demonstration by Executive Chef Ron Hall at the April meeting of its Diabetes Support Group. The event is planned for Thursday, April 5, 12 noon, in the hospital’s first floor conference room.
The menu will feature Greek vegetable salad, feta stuffed chicken breasts, lemon mint couscous, zucchini with pesto, cheese filled poached pears and berry cooler.
Ron Hall has been Mercy’s Executive Chef since 1992 and has won many culinary awards during his career
.
“Many patients come to us with ideas about what life will be like with diabetes, and at the top of the list is a bland and boring diet,” says Mercy dietitian Britt McConnell. “They believe they will spend the rest of their lives being hungry. But we show our patients that food can still taste good and be satisfying. People can adapt, and their health will benefit.”
